Natural Processing Explained:

After the coffee cherries are picked from the trees they are laid out to dry in the sun. Drying stations vary depending on region; some used brick patios and others use raised beds which enable air to flow around the cherries and dry them quicker. To avoid mould, rotting or further fermentation the cherries are turned regularly. Once the cherries are dried, the skin and fruit flesh is mechanically removed and the green beans are stored before exportation.

History Of Mantiqueira De Minas:

Located of the Minas Face of Serra de Mantiqueira, in the south of the state of Minas Gerais, is the region of Mantiqueira de Minas, a well known producer of high quality Arabica. With centuries-old tradition in coffee growing, at altitudes between 900 and 1500m, it has the ideal climate and environment for the production of specialty coffee. In this area, coffee growing is in its fifth generation.

Comprised of 25 municipalities, the region has 8095 producers, 82% of which are small producers, making a total of 57,000 hectares, with an average annual production of 1,370,000 60kg bags.

What To Expect:

Mantiqueira de Minas coffees are sweet with a mild citrus acidity. They achieve a minimum SCA Cup score of 83, guaranteeing a product with quality, integrity and unique characteristic.

About:

Over 80% of the members are small farmers who are constantly improving and evolving their coffee growing. A large percentage of these members have also been awarded in the most recognised quality concourses. Plus, they hold world record scores in Cup of Excellence (natural and pulped natural). These accolades reflect the hard work, effort and commitment given by the producers.
