Peru Lambayeque

BROWN SUGAR, HAZELNUT, DRIED DATE

The women of CECANOR are proud to be the originators of the Café Femenino concept. While women have always been crucial to coffee production in Peru, men traditionally held the economic power. In 2004, 464 female coffee producers in Peru united to change this dynamic and take a step toward empowerment by creating the first Café Femenino co-op.

Nicaragua Tierra Madre

DARK CHOCOLATE, CARAMEL, DRY ROASTED PEANUTS

This Fairtrade coffee is grown and produced exclusively by women in the region of Jinotega, Nicaragua. In Jinotega, women have only 15% of the land titles. This ownership is key to accessing credit loans for production and other economic activities. Upon meeting certain quality standards, they receive a premium. This assists the women in obtaining legal title to their land and permitting a better quality of life for them, their families and in turn- the community as a whole.

Honduras Amprocal

CHOCOLATE, TOFFEE, BUTTER FUDGE

This all-female association was founded in 2007 by eight women to strengthen the presence of female producers in the area. Originally a microfinance operation, it is now not only a green coffee supplier, but they also have their own roastery and coffee shop. They are certified Fairtrade and have 39 members registered Organic. Farmers are provided support from an agronomist to improve the productivity and sustainability of their farms.

Washed Process Explained:

The most popular way of processing coffee. The fruit flesh is mechanically removed with a machine known as a depulper, the beans are then put into a water tank to ferment. The amount of time is takes to ferment depends on climate factors such as altitude and temperature, in hotter regions the fermentation will be quicker and vice versa. The process typically takes between 24 – 72 hours. Once complete, the coffee beans are then dried on patios or raised beds.

Flavour Profile / Light body, retains the citrus and floral flavours.
