The Producer

Aulia Kahfi inherited Rakyat Farm from his family, who produced commodity grade coffee for its ease and reliability of income. In his teens he helped his family to cultivate this crop, and initially had no desire to work in coffee, instead working mining Vesuvianite a volcanic precious stone. Now in his thirties, Aulia has developed an interest in coffee, and with the farm under his stewardship, production has pivoted further towards a speciality grade crop.

Aulia has expanded his enterprise somewhat, purchasing coffee from nearby, collecting it in his old van farms and processing it. This has made his business into a very small-scale cooperative by proxy.

‘Sesangot’ is the name of a beautiful caterpillar which is native to the Gayo region and can be seen living on the coffee trees in the area. Aulia named his more special, experimentally processed coffees after this because of the caterpillar’s unique appearance.

 

 

 

Anearobic Natural Process

Aulia collects the ripest cherries and ferments them in water for 24 hours, changing the water at 12 hours to ensure they don’t ferment too much. The cherries are then drained and raked so they dry evenly on patios. The cherries can take 6 days to dry completely before the dried flesh is removed from the fruit, by which point the fruit has had time to impart some great sugars and acids to create a sweet and complex flavour.

The Flavour

The unique processing method allows for the slight fermentation of some of the fruit, which brings a sharpness to the already incredibly sweet notes that the fruit flesh brings to the coffee through natural process. These sweet and sharp-sour notes combine to create amazing fruit flavours, but with a chocolatey and spicey body. Expect bright strawberries and cherries when brewed as a filter, but something more full bodied when brewed as an espresso, and when made into a milk-based drink expect chocolate cake and strawberry jam.
